Creamy Peach Cobbler

Juicy ripe organic peaches are the main ingredients in this traditional summer favorite.

Creamy Peach Cobbler

Filling
1 cup organic sugar
2 organic eggs
2 TB all purpose flour
1/2 tsp nutmeg
4 cups organic fresh peaches (4 to 6)

Cobbler
1 1/2 cups organic all purpose flour
2 TB organic sugar
1 tsp baking powder
1/2 tsp salt
1/3 cup softened butter
1 organic egg, slightly beaten
3 TB organic milk
3 TB organic sugar

Preheat oven to 400 degrees. Peel and slice peaches. Stir all filling ingredients together (except for peaches) in a large bowl. Then, gently mix in peaches. Pour into a 13 x 9 inch pan. In a medium bowl, stir together all the dry cobbler ingredients. Then, cut in butter until crumbly. Stir in egg and milk until just moistened. Crumble cobbler mixture over peaches and sprinkle with 3 T sugar. Bake for 40 to 45 minutes or until golden brown and bubbly around edges. Serve with whipped cream or vanilla ice cream.
